Hey Rachel! Our favorite crock pot dish is almost not a recipe, it's so simple! :-) I put 2 frozen boneless skinless chicken breasts in the crockpot with 1-2 cups of salsa or picante sauce and a little bit of water. (We like Pace Picante Medium best) Cook until the meat is really tender, about 3 hours on high or 5 on low. Then shred it up with 2 forks and mix it with the sauce. We love this in burritos and the leftovers make a yummy nacho topping!
Hey Rachel, We like to do the same thing as the comment before except I use BBQ sauce and make BBQ chicken sandwiches. I put the chicken breasts in and then sprinkle some Nature's Seasoning on it. I usually let it cook and then add the BBQ sauce about an hour before it is done and start chopping it up. they are yummy wih french fries and baked zucchini and squash. I also have a great vegetable soup recipe if you are interested. It is wonderful in the fall with some bisquits or rolls. I will look and see if I can find some other crockpot recipes.
Rachel, I really like the crockpot recipes on the flylady.net website. She calls the crockpot her "secret weapon." Also check out the savingdinner.com site...it is in conjunction with flylady. -Sara
There's a great cookbook out there called Fix-It and Forget-It, Slow Cooker Favorites. You could probably get it on Ebay, etc. I got mine at an Amish restaurant in Sarasota for $5.00. Mom's a bargain hunter too.
hey ray i amke a real goor italian beef so easy elisabeth and peter both love it. i will tell u over the phone next time not too good with my typing when i'm tired love ya Lilah
That cookbook your mom mentioned is really great and there are several in the series - I have "Fix it and Forget it Lightly" which is the lower fat version. The crockpot was my best friend when I taught full time...and I've found it's a great way to make dinner in the summertime without heating up the whole house!
got another one for you! 1 can italian tomatoes (with the spices) 1 can petite diced tomatoes and one can tomato sauce. Put it in the crock pot with 1/2 pound ground beef and cook as long as you need to. Serve with whatever pasta you like. I've also made this with sausage but I have to cook the sausage first (too much grease) and it isn't quite as good as the meat cooking in the sauce all day.
